Ingredients

  • 6 tablespoons unsalted butter
  • 16 ounce bag mini marshmallows, plus 2 cups mini marshmallows, divided
  • 3 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt, plus more for sprinkling
  • 8 cups crispy rice cereal
  • 1 cup chocolate chips
  • Melted chocolate, for drizzling, optional

How to make it 

  • Use nonstick cooking spray to grease a baking pan measuring 9 inches by 13 inches. Should you so desire, you can line the dish with parchment paper. Put the pan outside. To melt the butter, place it in a large pot and set the heat to medium.
  • Continue stirring the mixture after adding the 16-ounce bag of marshmallows until the marshmallows have completely melted. If you overcook the marshmallows, they will become dry and brittle.
  • Take the pan off the heat and use a whisk to combine the cocoa powder, vanilla extract, and salt from the sea. After adding the rice krispies, give the mixture a gentle stir until the marshmallows are evenly distributed throughout the cereal.
  • Add the chocolate chips and the remaining two cups of mini marshmallows, and stir until combined. There will be a melting of the chocolate chips into the treats. Place the mixture in the pan that has been prepared.
  • To evenly distribute the mixture throughout the pan, use a spatula that has been greased. Alternatively, you can use your hands to press the mixture into the pan after lightly greasing them. As a garnish, if desired, sprinkle with flaky sea salt.
  • In addition, if you so desire, you can drizzle a little bit of melted chocolate over the top.
